CPK

One of my all-time favorite places to eat is at the
California Pizza Kitchen.
Now I can make my favorite pizza from CPK
right here in my home!

I was able to make my favorite pizza from CPK
right here in my own home!
He gave me the recipe from his mom who got it from Gail.

CPK BBQ Chicken Pizza

The Crust:
1 c. & 3 T. warm water (105-115 degrees)
2 1/4 t. yeast
3 t. sugar
3 c. flour
1 1/2 t. salt
1 1/2 t. olive oil
In a small bowl, dissolve the yeast and sugar in warm water. Let sit for about five minutes until the surface of the mixture turns foamy. (if it does not turn foamy, either the water was too hot or the yeast was dead--try again). Sift together the flour and salt in a medium bowl. Make a depression in the flour and pour in the olive oil and yeast mixture. Use a fork to stir the liquid, gradually drawing in more flour as you stir, until all ingredients are combined. Knead dough on a floured surface for 10 minutes or until smooth. Form into a ball, coat lightly with oil and place in a bowl covered w/ plastic wrap. Let rise in a warm place for 2 hours (or until it doubles in size). Punch down dough and refrigerate overnight. Let dough warm up to room temperature for a few hours before making the pizzas.

The Toppings:
3 Boneless Skinless Chicken Breasts
1 1/2 c. BBQ Sauce
4 1/2 t. olive oil
3 c. shredded mozzarella cheese
1 1/2 c. grated Gouda cheese
1 1/2 c. sliced red onion
6 T. chopped cilantro
Cut the chicken into bite-sized cubes and marinate them in 1/4 c. of BBQ sauce for 2 hours. Heat 1 1/2 t. of olive oil on stove and saute chicken in pan for 3-4 minutes or until done. Form 1/3 of dough into a ball and roll out on a floured surface until very thin and 10" in diameter. Place crust onto baking sheet and spread 1/4 c. BBQ sauce over it. Sprinkle 1/2 of mozzarella cheese and Gouda cheese, then chicken, then red onion, then remaining mozzarella cheese.

BAKE pizza for 10-12 minutes @ 500 degrees or until crust is light brown. One minute before pizza is done, add cilantro on top.

SIDE NOTE FROM WHITNEY:
I did not do the whole overnight thing for the dough. I just made the pizza in one night and it turned out great. Also, I did not have two hours to marinade the chicken so I only did for about 20 min… still VERY good. AND use a Kitchen Aid Mixer, if you have one, for the dough. It is much easier than mixing in the yeast and kneading yourself.

Thanks to this darling couple...
We have a place in Cleveland!!
I do not mind the search for housing...
but when it is in a place I have never been before...
that's another story!
Matt & Taylor currently live in Cleveland.
They had their eye on a place for us there.
It all worked out!
They were kind enough to send us the application
and research the place to see if we would like it.
Of course they did an AMAZING job!
We will be only a few minutes down the road from them!
Which means we will be in the same Ward!
We are also VERY close to campus!
We are so grateful!

Adventures in April

For Dan's 24th birthday we:
went to a Salt Lake Real Soccer Game w/ friends,
ate a lot of shrimp,
opened presents,
and saw Avatar @ the Dollar Theater.






We graduated from BYU!!





Visited our families in California and of course ate at the
Crab Cooker:



Left Provo for Colorado and got caught in a snowstorm
which turned our
8 hour drive into a
12 hour drive:



Ate our first Sunday Dinner in our new place in Colorado:


I taped up some pictures for Dan in the bathroom.
These help us remember our goals for the future
and look forward to things we enjoy.



Visited 16th Street Mall in Denver,
saw Coors Field where the Rockies play,
and ate my favorite meal at The Cheesecake Factory!!
