Certification Exam

UCS 5K

I ran my first official 5K this morning!!
The race started and finished at the
Urban Community School in downtown, and along the
way I saw parts of Cleveland I had never seen before-
beautiful community gardens, libraries,
and fun restaurants.
The school had sponsored the event to
promote health awareness and raise scholarship funds.
Afterward, the Community Health Fair
inside the school provided good food and
interesting information about health and fitness.
My friend Gayle had invited me to join her and
her daughter (a student at the school) in the race.
It was a blast to race with them!
My friend Miranda also came and smoked us all!
Way to go girl!

Salad Recipe

I am sharing with you one of my favorite salad recipes!
You should feel special, because
very few have tasted this masterpiece!
Let me advise that you must not substitute anything.
Stick to the recipe and you will not be disappointed!
My Aunt Kaye's Famous
"Orange Salad"
1 large head Red Leaf Lettuce,
washed, dried, chilled,
and torn in bite size pieces
1 medium Purple Onion,
thinly sliced
1 11oz. can Mandarin Oranges,
drained and chilled
1 small Jicama,
peeled and julienned
4 oz. Sliced Almonds
3 Tbs. Sugar
Caramelize the almonds in the sugar
on low to medium heat in a non-stick pan.
Lay on foil to cool.
Dressing:
1/3 cup Frozen Orange
Juice Concentrate
2 Tbs. Red Wine Vinegar
1/2 cup Vegetable Oil
2 Tbs. Sugar
1 Tbs. dry Good Seasonings Italian Dressing

Easter

Yesterday was a wonderful day!
It started off with a little egg hunt for Dan.
He was totally surprised! I loved it. :)
Dan usually has church meetings in the morning,
but yesterday, he didn't.
So we got to ride to church together!
I know, it is a small thing, but I loved it.
Sacrament meeting was so good.
Some of my friends were
involved in a musical number.
My friend Jenny sang,
Beth played the cello,
and Holly was on the piano.
It was beautiful.
I had the opportunity to speak at church.
I spoke about honoring the Sabbath day,
my friend Miranda spoke of Easter symbols,
and Scott talked about the resurrection of Jesus Christ.
The Spirit there was strong and could be felt by many.
It is this way every Sunday at church,
but Easter is always special because
of our focus on the resurrected Lord.
After church we got to spend time with our
sweet, new nephew Carter and played games
with Matt and Taylor.
Then we headed over to our friend's house
for Easter dinner and festivities!
Dinner was amazing,
the kids were so much fun,
and I felt like I was with my own family!
